Elkin Guzman and his mother, Fanny Vargas, have been doing some amazing work with their coffees through the understanding of their trees, terroir and technology to help in their production. This lot is of a Castillo variety harvested when the cherries are at 24 brix degrees (a standard used to measure the amount of sugars within the cherries). Floaters are removed and the coffees are hand sorted again after floating before drying the cherries on raised beds for 25-30 days.

This is part of the series of coffees that we had shortlisted for competition use when we were in Colombia last September. Together with Las Mesitas and Las Orquideas, these coffees were carefully selected after endless rounds of cuppings. We feel they stand out in their own ways for certain flavours, sweetness and characteristics which we find unique in each of them and we are super excited to be sharing them with you.
