Jairo Gomez grew up in a coffee producing family and started growing his own coffee trees on a small piece of land that was inherited from his father when he was 20 years old. Over the years, he managed to save up enough to expand the farm and increased his coffee trees from 1000 to 5000. With the help and advice from our export partner, Banexport, Jairo has implemented changes in his farm that led to higher cup scores for his coffees. For example, he now separates the varieties in his farm for processing. He also picks the Castillo cherries when they are purplish, instead of red and he does a longer fermentation period to increase sweetness in his coffees. This coffee stands out for its distinct currants and black plums flavours, followed by fizzy cola sweetness and a dark chocolate in the aftertaste.
