We first met and visited Gilberto Baraona’s farm back in 2014. Los Pirineos back then was very different to what we see today. During the peak of the coffee rust that devastated much of El Salvador’s coffee production and a big part of his farm, Gilberto was determined to come back stronger. In the past 4 years, he has been continuously renovating different parts of the farm by taking out coffee trees that were badly affected by the rust and replacing them with other varieties that are slightly more resistant but yet still tasting good on the cupping table.

Knowing that climate change is already happening and that the rains are becoming more and more unpredictable, he also built a giant reservoir at the top of the farm to ensure that he has enough water collected when the rains arrive. By understanding the needs of the specialty coffee market, he has also built a lot more raised beds to dry his coffees slowly and evenly.

This lot is a red honey processed Pacas variety with almost 100% mucilage left on the bean to caramelise under the sun on raised beds for 3 days before raking the coffees every 20 minutes for 15 days after. The result is an incredibly clean cup with notes of berries, black plums, raisins and dark chocolate aftertaste. Round and milky in terms of the body and works great as a black or milk coffee.

Gilberto submitted a washed Bourbon lot from Las Palmas this year to the Cup of Excellence and came in 2nd!
