Antoulio Paulino Castillo Ramos is the owner of Finca El Coyolar. The farm is approximately 3.5-manzana in size (~ 2.4 hectares), and is planted with several different varieties including San Ramon, Caturra, Typica, Bourbon, and Catuai. Part of the estate was inherited in 1992, from the father of Juan Ramirez. The other pieces of land were bought. During harvest, after picking, the coffee cherries are depulped on the same day and dry fermented for 18–24 hours. It is then washed and dried on concrete patios for 3–5 days, depending on the weather. This cup opens up with notes of black cherry and tropical fruit acidity followed by brown sugar sweetness. Lingering chocolate aftertaste and coupled with a coating mouthfeel. Very tasty and satisfying cup as a black or white.
