Processing: Red Honey. Once the cherries are harvested, there are transported to the wet mill located in the farm and left overnight to ferment in cherry form for 16-20 hours before de-pulping. The coffee is then transported to the dry mill and dried on raised beds for 15 days.

Octavio Peralta takes great pride in his coffees and has been instrumental in the improvement of the wet and dry mill facilities at the farms and the beneficio. Finca Samaria is managed to ensure environmentally friendly practices. A big part of the farm is a protected forest and there is a conscious effort to protect natural water sources in the farm. In addition, Peralta Coffees provides general support to the workers in the farm as well as the community, such as educational assistance to the schools in the village.
