First coffee on our 2019 menu to come from the Centrals is from a familiar farm - Santa Maria de Lourdes, in Nicaragua. Situated in the Nueva Segovia region which produces some of the best coffees from this country that has been previously ravaged by civil war which only ended in 1990. After the UN helped to clear the area of mines, Octavio Peralta set out to restore the farm. With 80% of the farm left aside in its natural forest habitat, resulting in a land with luscious vegetation and wildlife, Octavio wanted to build a sustainable farm growing some of the best coffees that is possible and contributing to the ongoing conservation of the surrounding area. Coffee trees are also grown more sparsely apart due to the high rainfall and humidity in this area from the thick vegetation to reduce fungus and pests.

This coffee is a fully washed Java variety that had the ripe cherries picked between December and March. The cherries are mechanically depulped, fermented, and washed before taken to the nearby mill of San Ignacio where they were dried on raised beds for 11-15 days.

What we enjoy most of the Java variety is its delicate fruit notes coupled with floral and tea-like flavours. This lot of Java exhibit flavours of peaches and dried apricots, a sweetened Rooibos tea finish with light jasmine florals. It is a transparent and clean coffee, great as an “after-meal” brew.
