Faudel owns a very small farm of 1.2 hectares and grows the variety Colombian and Caturra on it. After receiving advice from our export partner, Banexport, he started to improve on his production and picks his cherries only when it reach 18 degrees brix and have a deep red colour. The "Caturra" variety, whose name comes from the indigenous Guaraní language and means "small", was introduced to Colombia from Brazil in 1952. It is believed to have been created by spontaneous mutation in a Bourbon coffee plantation. The characteristic of the Caturra variety is its small size, which makes it easy to cultivate and manage, especially in mountainous regions and areas with limited space.
Cherries are pulped during the afternoon and then fermented for 36 hours before washing with clean water thrice. The beans are then dried on parabolic dryer commonly found in Colombia for 10 days and moved 3 times a day during the drying process. The result is a cup that is sparkling with fruit tones and sweetness.
